***BECAUSE WE HAD A FREEZE: FRIDAY, OCTOBER 8TH
AND SUNDAY, OCTOBER 10TH ARE THE LAST
DAYS FOR OCTOBER, THEN YOU CAN PICK UP ON ONE
WEEKEND IN NOVEMBER. IT WILL BE FRIDAY, NOVEMBER
5TH AND SUNDAY, NOVEMBER 7TH***
THIS WEEK'S PICKS:
YUKON POTATOES, RED CLOUD POTATOES,
RUSSIAN BANANA FINGERLING POTATOES,
GARLIC, GREEN TOMATOES, KALE,
GREEN PEPPERS, JALAPENO PEPPERS, COLLARD GREENS,
BLACK CABBAGE, RED BEETS, AND
ALL THE HERBS YOU CAN CUT, EXCEPT THE BASIL,
AS IT IS DEAD BECAUSE OF THE FREEZE WE HAD
OBSERVED:
*THE FOLLOWING ARE DONE FOR THE
YEAR: MELONS, CORN, TOMATOES, EGGPLANT,
HUNGARIAN HOT PEPPERS, CAYENNE PEPPERS, BANANA
PEPPERS, AND BEANS
*YOU WILL HAVE LATE CABBAGE ON
YOUR NOVEMBER PICK UP
*YOU WILL HAVE POTATOES ON YOUR
NOVEMBER PICK UP
*WE ARE HOPING YOU WILL HAVE
SOME WINTER SQUASH ON YOUR NOVEMBER PICK UP
*CUT ANY HERBS YOU WOULD
LIKE--SEE ROBIN FOR THE "MAP"
RECIPE
The following recipe can be used to stuff any
vegetable of your choice, even the winter
squashes.
Robin's Stuffing for Veggies
1 cup cooked brown rice
1 cup cooked legumes (any)
1/2 cup finely chopped mushrooms
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1/2 cup finely chopped zucchini
1/2 cup vegetable broth
1 tbs parsley
1 tbs salt
1 tsp fresh ground pepper
Sauté onion, green pepper and zucchini in large
skillet until tender.
Add remaining ingredients. Cook over medium-low
heat 5 minutes.
Use to stuff: peppers, mushrooms, zucchini,
acorn squash, onions,
or tomatoes. Bake in oven accordingly.
May top with grated Parmesan cheese and/or other
cheese of your
choice.
