BEEF CUT PRICE LIST

Certified Organic Grass fed Beef by the Individual Cut Cut prices.  From Graham's Certified Organic farm in Rosebush, Michigan. Jim & Pat Graham's farm is where Tim & I purchase the feed for our egg laying hens. Grahams raise their animals humanely, naturally--they are outside, not confined, never fed chemicals! They raise their animals the same way we have always raised our animals here on our farm. Tim & I would not offer our Farm Members anything less than we eat ourselves! Graham's meat is the closest we have found to our own that we have raised in the past.

Beef by the cut available Saturday, May 24th, 10am-3pm or by appointment; please call or email Monday-Saturday 10am-9pm.  

 

Flat Fee $4.50/LB for 100% GRASS FED, CERTIFIED ORGANIC BEEF IN BULK, HANGING WEIGHT!     Hanging weight is the weight of the animal after slaughter, but before cut into individual packages. Deposits must be in by June 6th for a June 27th, 2008 pick up! These Angus beef are raised outside at Graham's Organic Farm in Rosebush, Michigan. Their cattle are never confined in a feedlot. On conventional farms cattle live in one spot most of their adult lives, eating and relieving themselves in that one place! Very unhealthy. This is not the way at Graham's farm!

Deposits for bulk beef: $100 per eighth or quarter. $200 per half, $400 per whole.
 

Angus eighths weigh approximately 100 lbs, quarters weigh approximately 200 pounds and halves weigh approximately 300 pounds--all HANGING WEIGHT. You pay for hanging weight; the meat you take home is approximately 25% less than the hanging weight. When you pay a flat fee by hanging weight, you are paying the butcher for slaughter, cooler costs, cutting, packaging, etc...and you pay us for our time, gas, truck expenses, etc, for getting the meat to our farm for you.


Bulk Order Processing & What You Get: Jim & Pat Graham choose the cuts and quantity in vacuum packages. Each package is individually labeled with the product name and product weight. Your bulk purchase includes steaks, roasts and hamburger. No requests taken for certain quantities of certain cuts unless you order a whole cow.

In a bulk order, you may request: soup bones, liver, kidney, the heart, and the tongue. Obviously there is only one tongue and one heart per animal; the liver is very large, so can be shared among customers. Requests may or may not be guaranteed, as it is first come, first served. You are charged for these items individually. However, as a bulk beef customer/member, you will receive the cheaper, bulk price of $4.50/lb on the bulk beef pick up day. $4.50/lb will not be honored any other day.

Pick up time for your bulk order: June 27th, 5pm-8pm. We need you to meet Tim here the day he brings the meat back from Graham's. (a five hour round trip.) This will help fray any storage costs on your part ($5 per day).

A tip: Split an 1/8th bulk order, and share the cost with another family or two. Let me know if you are interested and I will try to "hook you up" with another family. Both families will need to be here at the same time to divide up the beef--we cannot do that for you.

The color of the egg depends on the breed of bird. Breeds of layers we raise:

1) Speckled Sussex, which lay light brown eggs.

2) Ameraucana, which lay olive-colored eggs

3) Araucana, which lay blue, green, brown, and light brown eggs

4) Delaware, which lay brown eggs

5) White Leghorn and Brown Leghorn, which lay white eggs.

Additionally, you may see a pink shade of eggs...we are not sure which breed is laying those, but suspect the Speckled Sussex , Araucana, or Delaware breed.

Our laying hens are fed certified organic grains that we purchase from Graham's Organic farm here in Michigan. We also feed them fresh water daily. Our laying chickens live on day range--they choose to go into their shelter at dusk, and come out onto their range at day break. All day they forage on grasses, sweet clovers, other fresh vegetation and bugs, in the sunshine and fresh air. This is their natural way to live, which produces healthier, happier birds and eggs. Thus, you will notice that our egg yolks are a deep orange, which means there is plenty of beta-carotene (Vitamin A) in our eggs from the grasses that the hens forage on.

*****Certified Naturally Grown EGGS FROM DAY RANGE DUCKS

NOTE: WE ARE VERY SORRY TO INFORM YOU, OUR DUCKS WERE ATTACKED BY A GROUP OF 3 DOGS A FEW MONTHS AGO, AND HAVE NOT BEEN THE SAME SINCE. Ducks are naturally nervous creatures. During the attack, 18 of our beautiful ducks were killed. The remaining ducks were very frightened every moment after that, even a few months later! Therefore, it seems they have gone a bit "crazy", and have walked off the farm. As a result, we found at least five dead on the main road. As of today, February 19th, 2008, the rest have gone somewhere. We will not be raising anymore ducks, sorry to say. We enjoyed their antics, eggs and meat while we had them. But the labor in raising them as ducklings is just too intense for us.

We are always looking for non-cracked or chipped, clean wide mouth & regular mouth quart size canning jars as well as ceramic crocks that are not cracked or chipped. If you know of any, please contact Robin. Thank you!

Made in small batches. Raw--right out of the crocks, without ever being heated! The ingredients that Tim uses in our sauerkraut are our certified naturally grown cabbage that we grow and Celtic Sea Salt. He cures the cabbage in our old-fashioned crocks that were passed down to him from his grandparents. These crocks are over 100 years old! Many folks who do not like sauerkraut absolutely love Tim's because it is so much more flavorful. You do not need to rinse his kraut, as it is milder and sweeter than most. Because it is raw (unprocessed--not cooked), you will get many more nutrients that aid in digestion and strengthens the immune function. Use it as a condiment, or as a side dish with a meal. Tim and I use about 1/4 cup at every meal as a digestive aid. Unheated is the best way to serve raw sauerkraut, as you want to preserve the nutrients that were produced when fermenting in the crocks. Keep refrigerated.

*****OUR RAW HONEY

Our certified beekeeper friend, Mike cares for our bees here at the farm, as well as his own on his property in Howell. The bees forage on many wildflowers, black locus flowers, chicory and clovers. The summer batch is a lighter, milder tasting variety. The fall batch is darker, and more robust tasting.

All natural honey will turn solid. To re-liquefy, place jar in warm water--do not throw out! Honey never goes bad.

Our honey is not pasteurized. Warning: do not feed honey to infants under one year of age.

1 lb bag sprouted kamut flour

1 lb bag sprouted cream of spelt cereal

Kamut is an ancient Egyptian wheat, much older than spelt and probably more easily digested by most people. It is a very mildly flavored grain, with a slight nutty or corn-like aftertaste. Kamut is low in gluten like spelt, and people say the gluten is different because of its ancient molecular structure.

The amount we pay to have the flour delivered is very high, but so worth the money, as Summer's flours and cereals are very fresh. They only grind the grain into flours and cereals when ready to make a small batch and ship. Their flour is not stored, only their grain is for a bit. The demand is high for this fresh product, so take advantage of it when we have it.

You will not be disappointed in these wonderful sprouted flours and cereal. Tim and I are enjoying them so much that we decided to make them available to you as well.

Since the spelt and kamut grains are sprouted, the end product, the flour or cereal, becomes as easy to digest as vegetables! Tim used to suffer so much bloating from flours. But not from these sprouted flours! Our favorite recipe is the waffles made with the cream of spelt cereal. We add our crispy pecans to the batter, and oh! Heaven!

The spelt flour also makes very easy, delicious biscuits! So does the kamut flour, which I like to mix with the spelt flour.

These roasters are from Graham's Organic Farm in Rosebush, Michigan. We have been purchasing our layer feed from them for a few years now. They are certified organic, and their chickens (all of their animals) are raised out doors on green grass and sunshine. Why broth?

Robin's broth is salt-free and contains only meat, carrots, celery, water, onions, raw vinegar, parsley, and thyme. You will need to add your own flavoring such as coconut milk, veggies, herbs, seaweed, spices, etc. Get creative!

We use broth as a preventative for any joint problems, as well as for energy--works wonders!

Broth available May 24th, 10am-3pm or operating days. Additionally, orders taken for the following dates: June 4th. $5 per 12 oz container. Comes to you frozen. Limit 5 per flavor. No minimum. If you would like to return the empty container, no need to use soap. Please just rinse with very hot water, and return with lid on.
