                       ROBIN'S OVEN-BAKED POTATO CHIPS
 
This is one of Tim's favorites. He cannot have too much fried oil; if he does, his hands, knees and feet split open and bleed. So, since he absolutely loves potato chips, this is a healthy alternative for him.
 
1 cup rice flour (or any you prefer)
cilantro   
garlic salt
paprika
fresh ground pepper
olive oil
4 or 5 medium Yukon potatoes, skin on
 
Combine first five ingredients in bowl that has tight-fitting lid.
Preheat oven 450 degrees. Slice potatoes thinly and put in bowl with olive oil; cover with lid and shake. Transfer into dry ingredient bowl; cover with lid and shake to coat well. Transfer potatoes to cookie sheet(s). Bake in oven about 45 minutes to an hour, turning potatoes half-way through. Enjoy!
