Robin's Stuffing for Veggies
The
following recipe can be used to stuff any vegetable of your
choice, even the winter squashes
1 cup
cooked brown rice
1 cup
cooked legumes (any)
1/2 cup
finely chopped mushrooms
1/2 cup
finely chopped onion
1/2 cup
finely chopped green pepper
1/2 cup
finely chopped zucchini
1/2 cup
vegetable broth
1 tbs
parsley
1 tbs
salt
1 tsp
fresh ground pepper
Saute
onion, green pepper and zucchini in large skillet until
tender.
Add
remaining ingredients. Cook over medium-low heat 5 minutes.
Use to
stuff: peppers, mushrooms, zucchini, acorn squash, onions,
or
tomatoes. Bake in oven accordingly.
May top
with grated Parmesan cheese and/or other cheese of your
choice.
