
Rooibos Tea Special
This is an herbal tea and has no caffeine.
Stevia is an herbal sweetener--it is safe for diabetics.
Stevia does not contain calories, carbohydrates, glycemic index, or chemicals.
Use any flavor mint you desire or mix them!
1 Tbsp bulk Rooibos tea (red African tea)
10 Cups water, boiled
10 5-inch stems mint (with about 8 leaves on each stem)
1/2 tsp liquid Stevia extract
Put bulk tea in holder. Bring the water to boil in pot. Steep the tea in pot of
water. Turn off burner. Let steep for about 3 hours. Meanwhile, tie mint stems
together with kitchen string. If you do not have kitchen string, just use the
stems in as-is. Put in pot of tea. Let steep for about 2 hours. Strain into
pitcher, add Stevia and stir. Serve in glasses of ice with a mint sprig for fun!
(I served this to our CSA Members at one of our produce pick ups in 2006, and
they loved it so much they were requesting a recipe.)
