Gooey, Sweet Shrimp Delight

Serves 2

10 medium, wild-caught raw Shrimp
½ cup chunks of fresh Pineapple
½ cup Coconut Milk
Pinch Stevia Powder (or a few drops liquid)
Enough Arrowroot Powder to thicken, up to 3 tablespoons
1 tablespoons Coconut Oil
1 tablespoon Butter
Optional: chopped Pecans as a topping

Be sure your shrimp is very fresh. Remove shells, de-vein and rinse. Pat dry with towel.

Now make the sauce: in small bowl put the milk and Stevia. Stir well. Now taste; if you want it sweeter, add another small pinch of
Stevia powder or another drop of liquid Stevia.

Add arrowroot and stir vigorously. Add amounts of arrowroot that give you the thickness that you desire. I like mine very thick.

Add the shrimp and pineapple; combine very well.

Melt oil and butter in skillet or sauce pan on med-low heat. Once melted, add the shrimp mixture. Turn heat up one notch. Stir continuously to combine the oils with the mixture. The mixture will become very gooey. Keep stirring until the shrimp tails have
tightened up. They are done now. Turn off heat. Plop in bowls, add optional pecans and serve immediately.
